Meyer Lemon & Sesame Tossed Cold Noodles

Makes: 1 plate of noodles. Serving size as shown.

Ingredients

  • 1 pack dry instant noodles

  • 1 tbsp Chinese sesame paste

  • 1/2 tbsp Meyer lemon juice

  • 2 tsp tamari

  • 1/2 star anise pod

  • 1/4 tsp sichuan peppercorns

  • 1/4 tsp ground cumin

  • Salt, to taste

  • Zest from half a Meyer lemon

  • Chives

Method

  • Grind the star anise pod and peppercorns to a course, powdery consistency. Finely chop the chives.

  • Mix the sesame paste, lemon juice, tamari, flavour packet from the noodles, and all spices in a small bowl to make a uniform paste.

  • Cook the noodles per the instructions on the packet. Drain the noodles completely, transfer to a bowl with a lid, and pour the paste over the noodles. Close with the lid, toss the noodles till they’re fully coated.

  • Plate the noodles, and sprinkle the chopped chives and lemon zest all over.
